Natcha Lot 3 undergoes
carbonic maceration fermentation using red wine yeast, creating a controlled environment that encourages the development of deep fruit aromatics and floral complexity.
After fermentation, the cherries are slowly dried to stabilise the flavour profile and preserve clarity in the cup.
The result is a striking filter coffee that bursts with
