The result is a coffee that is deeply layered, smooth, and aromatic, with notes of dried dates, mint chocolate chip, and cardamom caraway—a true reflection of his expertise at El Diviso.

Nestor Lasso is a third-generation coffee farmer from Pitalito, Colombia, carrying forward the legacy of his grandfather, José Uribe, who founded El Diviso. Over the years, the family has worked tirelessly to elevate their farm’s reputation in the specialty coffee world by experimenting with processing techniques that push the boundaries of flavor.
Through years of trial and error, Nestor has mastered fermentation and controlled drying techniques that highlight the most dynamic and fruit-forward characteristics of his coffee. His approach has led to some of the most exciting lots coming out of Colombia today.
El Diviso is a family-run farm where tradition and innovation go hand in hand. Nestor and his team oversee every stage of production, ensuring that quality and consistency remain at the forefront. Their meticulous approach brings out the structured, spiced complexity that makes this Java Washed coffee so special.
It all starts with careful cherry selection, where only the ripest fruit is picked to ensure optimal sweetness. The cherries are then depulped and undergo a 48-hour fermentation in water tanks, allowing the coffee’s rich, spiced, and chocolatey notes to develop.
After fermentation, the beans are fully washed to remove any remaining mucilage, enhancing clarity and creating a smooth, velvety mouthfeel. Finally, the coffee is dried on raised beds for 15-20 days, ensuring even moisture reduction and allowing the flavors to fully mature.
The result is a coffee that is smooth, aromatic, and deeply spiced, with layers of dried dates, mint chocolate chip, and cardamom caraway.
