From the high elevations of Acevedo, Huila, this expressive Java lot from Jhoan Vergara highlights a more textural, fruit-driven side of his processing work. Grown at 1,750 meters above sea level, the cherries develop slowly in Huila’s cool mountain climate, building dense sweetness before harvest.
The defining feature of this coffee is the innovative Duo Cherry method. After a carefully staged fermentation and drying phase, rehydrated cherries are combined with fresh fruit and simultaneously depulped. This uncommon approach uses the natural viscosity of fresh cherries to enhance body and integration in the final cup.
In the cup, expect candied peach sweetness, a soft sweet tea character, and a velvety finish.
