Lost Origin Coffee Lab was founded by Franz Zeimetz, a craft brewer who brings brewing science and microbiology into coffee fermentation. With custom built tanks, controlled drying rooms, and a dedicated microbiology team, the focus is always precision and a better taste experience through control, not chaos. For this collaboration, they teamed up with the Navarro Family of Finca Las Margaritas in Volcán, a farm known for elegant Geisha lots and a commitment to innovation and careful processing.
This depulped Geisha lot was fermented in stainless steel tanks under tightly controlled temperatures using a guided culture protocol. A measured fermentation medium supported the process, followed by slow drying in temperature and humidity regulated rooms. The result is a clean, layered cup that feels bright and classic, with white peach sweetness, lemonade lift, and a smooth honey finish.
